Sugar Free White Chocolate puddin
w/ Sugar free Whip Cream & White chocolate/Dark Chocolate shavings

For the husband this weekend I made Monkey Bread for the first time.

 I forgot to take a picture before we dug into it last night, but it was so good!!  and my tummy loved it.. 

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened (low Fat)
1-1/4 cups  cold milk, divided (Skim Milk)
1 pkg. (3.3 oz.) JELL-O Banana Instant Pudding (Sugar Free)
1-1/2 cups  thawed COOL WHIP Whipped Topping (Low Fat/Sugar Free whatever you find)
1 HONEY MAID Graham Pie Crust (6 oz.)

BEAT cream cheese and 1/4 cup milk in large bowl with whisk until well blended.
ADD remaining milk and dry pudding mix; beat with whisk 2 min. Stir in COOL WHIP until well blended. Spoon into crust.
REFRIGERATE 4 hours or until firm

I have my Camera and after 2 weeks finally have a working battery for it! I was so excited.. the first thing I took a picture of was Vanessa and one of Curtis Mortal Kombat figurines Sub Zero. 

 If anyone has any websites they could recommend for learning photography I am all for it!

Green Chile and Pepper Jack Cheese Stuffed Chicken Breast

saw this recipe at For the Love of Cooking

I made mine a little bit different I used diced tomatoes & Green Chile peppers
I also topped the chicken with more cheese on top and tomatoes & peppers but I had already taken the picture.. I also didnt have chicken breast I had chicken breast finely sliced so I laid them on top of each other and used toothpicks to hold them together.. I made corn on the cob and Fried Sweet potatoes with a pinch of salt. 

  • 2 tsp olive oil
  • 2 chicken breasts (4 in my case)
  • 1  can diced tomatoes & green chiles
  • 4 slices of pepper jack cheese 
  • Sea salt and worcheshire pepper, to taste
  • Garlic powder, to taste

Preheat the oven to 400 degrees.

Cut a long horizontal slit along the center of the thin long edge of the chicken breast, nearly through to the other side. Roll the slice(s) of cheese into a tube and place into the whole green chile. Place the green chile & tomatoes into the chicken breast. Close the slit together with toothpicksSeason each side of the chicken with sea salt, worcheshire pepper, and garlic powder to taste.

Heat the olive oil in an OVEN PROOF skillet on the stove over medium high heat. Once the pan is hot, place the chicken in the skillet and cook for 3-4 minutes or until the chicken is golden brown, flip the chicken over and place the skillet into the oven. Cook for 20 minutes, or until the chicken is cooked through. Enjoy.

Not exciting

I received my items yesterday from the contest I won at Decorate This I love it! Everything is so fancy.. I can not wait until I can try everything out, I need an excuse to make cupcakes now.

I am still waiting on my new battery so that I can start playing with my new Nikon D3100.. Its been 2 weeks and  my camera has been tucked neatly away so I wont be sad about finally having it and not using it lol..

I have been preparing for Curtis' birthday in a month, I making it XBOX360 themed... Black & Green.. I have already ordered the party decorations, I have made invitations, and I already found someone to make an XBOX 360 fondant cake. He has never had a birthday party before so I wanted to do something nice for him  this year..

I have also already ordered his Father's day gifts I purchased him the next two issues of Vampire Hunter D books he has been reading, I told him I was not going all out on Father's day since his bday was right around the corner.

I am 6 months out today :)

I am down 86 pounds!
no mini goals at the moment

I am reached my second goal of 160 on May 12

I have 18 pounds left to go to get to Goal

I wear a size 10 jeans but they are getting loose..

and my BMI has gone from 41.8 to 27.1
Extremely obese to Overweight

All in all I dont care if I dont lose another pound, everything I've ever wanted to be able to do I can do.. I love being able to go into a store and find my size in anything I chose and not worrying if its too tight or makes me look bad.. I wear dresses and skirts.. which I have never done unless I had to.. 

My husband piggy backed me around the house for the first time ever it was a thrilling experience and nice for him to say that I am light as a feather, I better be careful or I will blow away haha.. 

I eat whatever I want without any problems, I dont eat rice or noodles because they fill me up to much.. I can however eat sushi rolls with no problem I can have about 2-3 of those.. I also dont eat many sweets.. Sunflower seeds are still and have become more of an addiction of mine.. and I am also now addicted to Thrift stores It has been my best friend while losing the weight..

The weight loss has slowed a lot.. but I am not complaining at all.. I am the happiest I have been in a looooooong time :)

I am so excited, and it was perfect timing because I am dabbling into baking, Vanessa is getting older I know I will be making more treats and snacks as the years go by so I need to sharpen my skills..

Nailin' Thursdays

I want to start Nailin Thursday's

I am getting into doing my nails more, so when I do decide to re do them I will post something on the following Thursday.. I am also in the process of buying everything I need *professional* to do acrylic nails I think when its all said and done I will probably spend about a good $300..

So far I received

This is just to get me started, theres a #08 brush I really want to get but it made more sense to get a whole pack of brushes then just 1 single brush at the moment

So Happy Belated Mother's Day to all the Mom's, My Bday was on Mother's day we celebrated Friday night with a huge BBQ and all my neighbors came :) I was so happy.. There was roughly about 20 people there not including everyone's kids, Everyone sang Happy Birthday to me it was so embarrassing! The dress I wore looked like this one:

I ended up sewing the front closed a little more because it was really revealing lol

My dad sent me money to buy the camera I have been wanting for my Birthday I am getting my first DSLR Nikon D13000 (or Nokia inside joke with Ash)

I just got a message it shipped today I am so excited for it to get here It will probably take a few weeks since were in Germany.

Cooking Tuesday

Black Pepper Mustard Vinagerette

1/4 C white rice vinegar (or white vinegar)
1/2 C Olive oil
1/4 tsp of kosher salt (regular or sea salt will work)
3 Tbsp of Honey
2 Tbsp of Brown Mustard
1 Tbsp of black pepper
chopped up green onions (Optional) 

Mix all together, I microwaved it for 20 second to help it blend better.. 

Drizzled all over the chicken.. OMG TO DIE FOR.. lol

BBQ Spice Rub

2tbsp Brown sugar (I used Dark & Light 4tbs) you don't have to
2 tsp paprika
2 tsp garlic powder
1 1/2 tsp salt
1 tsp ground cumin
1 tsp chilli powder
1 tsp ground black pepper..

mix it all up I coated boneless chicken and baked at 350 for 20 minutes uncovered

Home Made Fried Rice W/ Lemon Pepper Wings

One thing about living in Germany I MISS CHINESE FOOD! It just is not the same here.. So I just make my own Curtis was in the mood for some Lemon Pepper Wings and Fried Rice so I got to work..

Chopped up 1 Garlic Clove and 1 medium onion, set aside

scrambled one egg, set aside in a bowl for later

Sauteed Onions, Garlic, Corn and Peas in 1 Tbsp of oil until onions were soft and 2 Tsp of Worcheshire

I used that 5 min rice but it sucked, next time I will cook regular rice in a rice cooker
but fry your rice in about 2 Tbsp of soy sauce until you hear it start to pop.

Add your Eggs and other Ingredients and cook fry for 2-3 minutes

For the chicken all I did was bake them at 425 for 35 minutes
seasoned with Season all and Lemon Pepper seasoning

We took Vanessa for her first zoo trip to the Wilhelma zoo, here in Germany it was way better than the Atlanta zoo.we were there for a good 3 1/2 hours before we decided to go home.  We decided to do that because Curtis felt Vanessa was still too young to do Easter egg hunts and he really doesn't like the idea of Easter egg hunts because it has nothing to do with Easter. So we decided next year we will probably take her Easter egg hunting...
And now I am sick and just laying around.. I downloaded the game Infamous I think I am going to give that a try and then proceed to clean up before Curtis gets home.

I think every Tuesday as Long as I remember I am going to start Cooking Tuesdays! and I will post 1 thing I have made, it will be regular food as well as healthy food since I am supposed to be eating healthier.

Seafood Soup

My doctor told me I need to eat more vegetable carbs, and my husband had the taste for some seafood so he asked if I could make a soup. So I threw in some vegetables,shrimp,lobster, a voila we have seafood soup! now this fed us both with still a lot to spare so I freezed it for a rainy day..

1 Can of chicken broth
2 Cups of water
1 Bag of mixed veggies
1 medium Onion (optional)
12 large shrimps
2 lobster tails
and your favorite seasonings to taste

I used
Old bay seasoning
salt & pepper
Cajun seasoning

Busy Day

The dress I ordered at the beginning of the month came in the mail today I am so excited! it is a size "LARGE" me in a L.. Who would have thought?! I really need to tone my arms and my legs though. My friend talked me into getting the Insanity workout and I think I am going to start it on Monday. I skipped through parts of it so I could see what they do and I think it is going to be intense! I am pumped I need to do this lol I am so close to my goal weight It times to make sure I am fit not just skinny.

On another note I tried corn rolls for the first time today! I am so proud of myself.. I am trying to learn how to style Vanessa's hair now that she is a bit older and notices when I do her hair. Everyone says the corn rolls look great they are a little loose I don't know how to braid them tight but I think its great for a first time.

My name is Laneishia (lah-nee-shee-aahh) but everyone calls me Nisha, I am 23 born on May 8, 1987. I was born and raised in Texas but currently live in Germany, and I am loving every minute of it. I am a full time student at Westwood College online for Graphic Design and Multimedia. I do free lance work from time to time. I am also interested in Photography which I am still learning. I love Video Games and play them frequently.

I am currently a SAHM mom to a little girl named Vanessa, she is 2 years old and the highlight of my life! She was born Jan 11 2009 and is so much like her daddy...

Curtis and I met in May 2006 and it was love at first sight! We were married in Nov. of 07' We have been through so much but I would not want to be with anyone else. He spoils me all the time and takes good care of his family.

On November 23, 2010 I had WLS surgery (weight loss surgery) the one I had is called vertical sleeve gastrectomy. 

Here is an entry a couple days out of surgery:

So Tonya's husband Wes picked Vanessa and me up around 7 am, we dropped Vanessa off with Tonya and headed to the hospital he had an appointment that day at 7:30 so it worked out pretty well. He went off to his appointment and I went down to the 1st floor to drop off my Urine sample. Then I went up to the 6th floor and checked in at the desk, the lady at the front remember me from before when they had lost my folder lol. and she took me straight to the back waiting room through the huge surgery doors. I was in a curtain room with a few chairs and a tv and they gave me 2 gowns and some of those hospital socks and a bag to put my clothes in. I waited until exactly 9:30 am before someone came and got me. 

The lady took me to the 3rd floor as soon as you stepped off the elevator you knew you were in surgery lol. everyone was wearing scrubs and masks, there were people lined up in beds waiting for their turn into surgery, some people I had recognized from upstairs, it was freezing down their I passed my surgeon on the way in kind of made me a little excited because it was all now becoming real. They gave me a bed and this guy came to hook me up to an IV he had such a hard time he had to get help lol. after like 4 pokes they finally got the first IV in. My DR came over we both had to resign one of my consent form because a month a had gone by and it expired, he asked me if I was ready and that everything would be fine. 

about 10 minutes later they wheeled me into the room. All I remember was them holding my arms out in like a cross shape for whatever they were about to do and I passed out I woke up to someone calling my name and asking me if I knew who I was lol.. apparently I was in recovery.. I was so irritable at that point I felt like they kept asking me a million question and all I wanted to do was say *shut up* lol but I was nice and answered the question they kept commenting on how alert I was, I was in no pain but I had burning sensation in my chest that was bothering me. My Dr walked in and said everything went excellent so that was good to hear. They proceeded to wheel me off to my room and I was able to slide over into my bed on my own which they also commented on. I was soooo Thirsty! but of course you can not have anything to drink or any ice chips :( 

they gave me a morphine button which I apparently used 12 times out of 30 uses and I only used it on the first day, it got rid of the burning pain but it also made me very nauseous and let me tell you throwing up on an empty stomach is not fun! They ended up giving me Zertec and some other medication I had to have every 6 hours for the nausea even though I dont really believed it helped when I used the morphine. I pretty much slept that entire day I was in and out of conciousness and writing jibberish texts to people telling them I was okay lol.

the next day I felt fine.. no burning no nothing I just felt tired. they finally brought me some chicken broth and some water with crystal light lemonade and jello. I felt so much better after consuming that and my nausea stopped. for dinner that night I had beef broth (which is gross) a grape pospsicle and some more crystal light. I was up and walking around the hospital because I was bored out of my mind. they said I was doing so well I would more than likely go home the next day (thanksgiving) 

My surgeon came in thanksgiving morning looked at my cuts and said I was able to go home after they took my catheter out and my drain.. some people said having the drain taken out hurt.. but it just felt weird to me.. like a foreign object being pulled out of your stomach. the guy said he had a guy earlier who said it hurt and was calling him every curse word in the book lol.. I have 4 incision about eh 1in long. they make kind of like a diamond shape if you were to connect the dots and one small incision/hole from where the drain was sort of to the left inside the diamond.

I am 4 pounds down since surgery I am a slow starter compared to others because I did not have to do the 2 week liquid diet before surgery but I don't care its all going to be worth it in the end. I am still in no pain. My incision are kind of sore but noticeable no nausea I am sleepy a lot and have been taking it pretty easy.
